Green Pea Pesto Aka Peasto

Ingredients

150 g fresh or frozen peas

2 cloves of garlic

25 g olive oil

10 g butter

Handful of basil leaves (or any fresh herb)

30 g parmigiano reggiano

20 g pecorino romano cheese

Salt to taste

5 cranks black pepper

Spritz lemon juice - about 2 slices

Directions

Add all ingredients to a food processor, but reserve half of the oil. Pulse until everything is chopped. Slowly drizzle in the oil while blending until a cohesive sauce has formed.

Taste it! Add salt, black pepper, and squeeze in lemon juice to taste.

Use with hot pasta, salads, flatbreads, or as a dip.
